Pesto before the frost

As luck would have it, I was already harvesting basil when my phone chirped to tell me there was a frost advisory for Sunday night. Only a couple of our basil plants did great this year, but they all did ok, so we had a pretty good haul.

It’s hard to get a sense of scale from that picture, but the metal bowl is about 20″ in diameter. We had approximately 36 tightly packed cups of leaves, in total.

Our general basil preservation approach is to make and freeze pesto. Batch one (before we ran out of pine nuts) got us almost halfway through the leaves. Mmmm… pesto!
